Herbed Cucumber Sandwiches
Herbed Cucumber Sandwiches
These sandwiches consist of a goat cheese spread and sliced cucumbers on bread. They make great appetizers with the crusts cut off, or lunch food inside pita bread.
Ingredients For Spread:
8 ounces of cream cheese at room temperature
10.5 ounces of mild goat cheese at room temperature (we used a spreadable mild goat cheese that worked very well)
1/2 teaspoon thyme leaves (mince if fresh, or crumble small if jarred)
3 tablespoons parsley (fresh or jarred)
5-6 tablespoons milk
salt, pepper, and garlic to taste
Place all spread ingredients in an electric mixer with paddle attachment. Beat on medium until well mixed. Add additional tablespoons of milk if the spread is very thick.
*Note* We have mixed with a wooden spoon as well
Ingredients for Sandwiches:
Cucumber any kind sliced thinly
Bread any kind (we prefer wheat or pita)
For sandwiches spread a thick layer of cheese spread on the bread and then top with sliced cucumber.
*Note* For appetizers we cut the crust off the bread before spreading cheese spread on.
