Beef Barley Soup
Serving Size: approximately (12) 12 oz bowls
Ingredients:
2 lbs Stew Beef or Hamburger
2 Cups Onion Chopped Finely or Pureed**
2 Cups Celery Chopped Finely or Pureed**
3 Cups Carrots Sliced
1 1/4 Cups Barley
18 Cups of Water (4 Quarts + 2 cups)
3 Cans Tomato Soup
1/2 Cup Parsley
3 Beef Bouillon Cubes
5 Bay Leaves
Pepper and Salt to Taste
Garlic to Taste
If using stew beef, brown beef in 2 tbsp of oil. Take out after browned and shed using fork. If using hamburger, you do not need to brown or shred.
Bring water to boil and dissolve bouillon cubes. Once dissolved, add beef and veggies to the pot. Add the barley and other spices and simmer until barley is cooked.
**We prefer using hamburger for the meat because it is cheaper and we were very happy with taste. We also prefer to puree the onions and celery.**
